I’ve been wanting to make a mooncake filled with jam so this morning I set about doing it.
Super happy with the results.
It feels as if I’m eating a jammy cookie actually!
The jam is a wild blueberry jam 🙂
I also used spirulina powder, mushroom powder, acai berry powder and kale powder to naturally colour the mooncakes. No eggs, no lard, no dairy, and this one has no oil either.
