Made the vegan ranch dressing from Tami Kramer’s Batch Cooking course. I turned it raw vegan by using zucchini instead of silken tofu. It was good. Used some of it as the dressing for my lunch salad today.
And then I also made Nutmeg Notebook's Vegan Ranch Twice Baked Potatoes coz I saw her make it on Chef AJ’s Live show and it looked so tempting!
But I didn’t bake it as I don’t have a proper oven (gave it up for dehyrator space) plus I didn’t want to cook my potatoes on high heat so I steamed it instead.
Made some adaptations to her recipe so I used shio koji instead of nutritional yeast and miso instead of salt.
The potatoes turned out super delicious and I can’t wait to let Mr Jazz Guitarist have it for our picnic lunch tomorrow!
