๐Spinach & Pumpkin Hearty Curry (cooked vegan) ๐

Since this is cooked, itโs more for Mr Jazz Guitarist. Iโm having a salad for lunch with a bit of this curry.
I adapted the recipe based on what I have.
MY INGREDIENTS 410g cooked chickpeas 2 cups diced pumpkin 2 cups of spinach 400ml of coconut milk - I added some coconut water powder from My Blue Tea 1 large onion chopped 2 garlic cloves minced 1 tablespoon Doku Bio-technology Ginger Juice from My Blue Tea 1 red chilli, chopped 1 teaspoon black mustard seeds 1 tbsp curry powder 1 tsp turmeric 1 tsp paprika 1 handful of chopped coriander Salt and pepper, to taste - actually I omitted the salt coz the taste from the pumpkin, chickpeas and coconut water was yummy already Water
