Since this is cooked, it’s more for Mr Jazz Guitarist. I’m having a salad for lunch with a bit of this soup.
I adapted the recipe based on what I have.
MY INGREDIENTS FOR THE SOUP 1 onion, minced 2 cloves garlic, minced 1 tomato, diced 2 cups dry monggo beans, mung beans 6 cups vegetable water 2 dried shiitake mushrooms, ground 1 cup coconut milk - I made this using coconut meat + water + My Blue Tea coconut water powder 1 bunch spinach salt and pepper to taste
