Am making this with some adaptations based on what I have but keeping the spirit of the recipe 😃I hope this works out coz I’m changing up some of the main ingredients and I don’t have any tortillas with me.
MY INGREDIENTS Some pieces of leek
3 carrots, chopped
2 stalks of celery, diced
4 jalapeño peppers, unseeded coz I like spice & chopped
4 cloves garlic, minced
8 fresh plum tomatoes, chopped
2 teaspoons ground cumin
2 teaspoons oregano. Unfortunately I couldn’t find Mexican oregano, you should use Mexican oregano!!
1 teaspoon ground coriander seeds
1 lb. Indian split peas coz I didn’t have enough lentils, so let’s see if this works
8 cups of bean water + filtered water
3 cups of Asian leafy greens, chopped (I used kai lan, spinach, kangkung)
1/4 cup cilantro, chopped Juice of 1 lime Salt & pepper, to taste
