I was excited to see this book at the BookXcess bookstore as Kathy is a friend of mine and weāve collaborated on a few bundles. Sheās appeared on my IG lives and Iāve appeared on her YouTube channel š
So today Iām making one of the recipes from her book for Mr Jazz Guitarist later since this is cooked vegan.
For my dinner, Iām keeping it raw and having grapefruit, mango and fresh jackfruit.
Am making some adaptations to it and using oat groats instead of rolled oats as oat groats are supposed to be healthier.
INGREDIENTS 2 (14.5 oz [411 g) cans or 3 cups (480 g) diced fresh tomatoes 1Ā½ cups (355 ml) water Ā½ cup (48 g) rolled oats 1 bouillon cube 3 teaspoons (2 g) grated ginger 4 garlic cloves, minced 1Ā½ teaspoons ground coriander 1 teaspoon ground cumin Ā½ teaspoon mustard powder pinch chili powder, optional salt and pepper, to taste
