🍅Becca’s Favourite Tortilla Soup (Cooked Vegan) 🍅
INGREDIENTS I USED based on what I had with me:
» 1 onion, peeled and diced
» 1 large jalapeno pepper, seeded and diced
» 5 garlic cloves
» 1 tbsp chili powder
» 2 tsp cumin
» 2 tsp smoked paprika
» 1 tsp black pepper
» 4 cups of water I cooked my beans in
» 10 tomatoes
» ½ cup heaped dried black beans, cooked
» ½ cup heaped dried chickpeas, cooked
» ½ cup heaped dried red kidney beans, cooked
» 2 ears of fresh corn
» 2 tablespoon lacto-fermented juice
» 1 bunch of cilantro, rinsed and finely minced (stems included)
» Avocado, crisps, cashew cream and cheeze for garnish
