🍲Hearty Winter Stew 🍲

This recipe is from the Thriving on Plants, Volumes 2 (Full-Length Cookbooks) by @ThrivingonPlants in the Thrive Bundle Fall 2024.

This is a cooked vegan recipe, I’m making it for Mr Jazz Guitarist. I’m just having fruit for dinner.

INGREDIENTS
2 tbsp olive oil
250g vegan meat
3 medium red onions, roughly chopped
5 cloves garlic, roughly chopped
1 litre (4 cups) vegetable stock
3 stalks celery, roughly chopped
3 medium carrots, cut into chunks
500g potatoes, cut into chunks
3 medium parsnips, thinly sliced
1 large turnip, cut into chunks
1 bay leaf
1 tbsp sweet paprika
2 tsp celtic sea salt
1⁄4 tsp freshly ground black pepper
1 tbsp cornflour
1 tbsp water

I adapted the recipe based on what I had with me! And also making it oil-free.
