💜UBE SOUP WITH GINGER & COCONUT (COOKED VEGAN)

Trying out an ube soup recipe I found on Foodalicious.

I’ve been seeing so many ube posts in the past few years so I’m really excited that Henley Nga sent me fresh ube as well as ube powder.

Purple Yam Soup with Ginger and Coconut

MY INGREDIENTS
1 Red Onions
1 Garlic Cloves
1 tablespoon Ginger juice from Doku & My Blue Tea
Water to saute
300 g Ube Purple Yam
2 ribs celery
3 shiitake mushrooms
125 mL Coconut Milk
400 mL Water
1 tablespoon miso
Salt & pepper to taste
FOR Garnish
Coriander leaves
Walnuts
Swirl of coconut milk
Pink peppercorn

METHOD
Heat water in a pot and add thinly sliced onions, garlic, and fresh ginger.
Sizzle all for a few minutes until the onions are soft.
Then, tip in peeled and cubed purple yam and let it sweat for a couple of minutes.
Now, pour in the vegetable stock and bring to a boil.
Simmer the soup over low heat for 15 minutes until the purple yam is soft.
Add mushrooms in to pot and simmer for 3 minutes.
Dish out mushrooms and some of the ube cubes and celery for texture.
Using an immersion blender, blend the rest of soup until it's smooth and velvety.
Season the soup with salt and pepper to taste. Pour on top of mushrooms, ube and celery.
Garnish it with coconut milk, sliced spring onions, chopped ginger and nuts to taste.

Ube, pronounced ooh-beh, is a purple yam often used in
Filipino and other Southeast Asian desserts. It has a
beautiful, deep purple color and is almost exclusively
used in dessert recipes, where it gives the sweets a
wonderful earthy and almost nutty flavor.

Ube comes in many forms. You can buy it in its
unprocessed, tuber form. You can also buy it processed
and frozen, dried and powdered, in Ube halaya jam form,
or as an extract.

WHAT IS THE DIFFERENCE BETWEEN PURPLE SWEET POTATOES & UBE ?
Not all purple yams are considered Ube. Only the purple yam that comes from the Philippines is considered Ube. Ube is often confused with Purple sweet potatoes which are also purple, but they have a few distinct differences.

1. The best way to tell if you have Ube is by the skin color. Ube has a light brown almost white color on the outside while Purple sweet potatoes are a dark purple color.
2. Japanese sweet potatoes have a drier texture than Ube.
3. Taste-wise, Ube is less sweet than Purple sweet potatoes, and it has a subtle vanilla/pistachio flavor. Japanese sweet potatoes don’t taste like that.
