🍚Vegan Egg Fried Rice (cooked vegan)🍚
Trying out Dan & Jess’ recipe from the recent Plant-Based Bundle November 2024!
I’ve made some adaptations the recipe based on what I have with me, and here’s what I used:
MY INGREDIENTS Ingredients: For the tofu 'egg': 280 g tempeh - I used tempeh coz Mr Jazz Guitarist loves tempeh and I wasn’t able to buy tofu that day without it going bad 1⁄4 teaspoon turmeric powder 1⁄4 teaspoon kala namak 1 tablespoon nutritional yeast
For the rice: 1 onion – chopped 2 garlic cloves – crushed 250 g carrots – chopped into small cubes 800 g cooked mixed 10 grain rice ~ 250g dry weight 130g Sweet peas 4 fresh shiitake mushrooms 2 tablespoons Mu soy sauce 1 tablespoon Mu oyster sauce 1 teaspoon coconut sugar White pepper to taste
For garnish 4 spring onions – finely sliced 2 red chillies
